Aubergine Parmigiana (V)
This historic dish (also called a Melanzane) was invented by Vincenzo Corrado, a cook from Puglia who served the aristocratic families of Naples in the 18th century. With layers of thickly sliced aubergine, tomato, herbs and cheese, it is baked in the oven and is comfort food of the very best kind, quite delicious. Serve with salad for a light lunch or supper with a few lamb chops for meat lovers or as it stands for vegetarians. Italians tend to eat it as a starter, but we love it as a main.
